No separate food wash sink in the kitchen

All salad, fruit and vegetables need to be washed before use (unless they are labelled as “washed and ready to eat”). As well as washing off dirt, insects, herbicides and pesticides, we need to ensure that all bacteria is removed (especially E.coli).

Use a designated “Food Wash Only” sink to wash salad, fruit and vegetables. Wash with a 2 stage procedure – wash then rinse in clean water. No need for food sanitising tablets.

Follow this procedure if you do not have a separate food wash sink in your kitchen

  • Wash the sink thoroughly before use
  • Sanitise the sink before use
  • Wash salad, fruit and vegetables at the start of the shift before dishes and utensils need to be washed

Use a colander so the food does not come into direct contact with the surface of the sink
