Chilling advice!
As it’s cold outside let’s keep with the theme and talk chilled food management.
So, what are the top 10 rules for safe management of chilled foods?
- Your chilled food deliveries must be 8°C or less
- Put chilled foods into storage within 20 minutes of it being delivered
- Ensure your fridges maintain a temperature of 8°C or less (ideally 5°C or less)
- Keep ready to eat foods stored above raw foods to avoid cross contamination
- Keep clean/prepared salads and veg stored above dirty/unprepared salad and veg
- Ensure all foods are date labelled
- Ensure all foods are in date
- Keep food covered
- Thaw foods under controlled conditions in the fridge
- Clean fridges daily including door handles.
Alert
If you are cooling cooked food for later use, it must be cooled to as low a temperature as possible within 90 minutes, then refrigerated.
